Preheat oven to 400°.
Bring a pot of salted water to boil and cook pasta a couple minutes from recommended cook time. Reserve 1/4 cup pasta water.
Cut garlic cloves in half and rub the entirety of the baking dish.
Cut brie cheese into quarters and distribute evenly on baking dish.
Add pasta to dish and season with salt and pepper.
Add white wine and reserved pasta water and stir. Top with thyme sprigs.
Cover baking dish with foil and cook in oven for 15 minutes, or until the cheese is melted and gooey.
Serve and enjoy.
