Using a large skillet, cook bacon strips over low heat, flipping occassionally until brown and crispy.
While bacon is cooking, bring a large pot of water to a boil. Add the pasta and cook until Al Dente (about 10-15 minutes). Make sure you reserve 1/2 cup of pasta water and set aside for later.
Transfer bacon to paper-towel lined plate, being sure to cover and pat to remove excess grease. Once cooled, slice into crumbled pieces.
Using the same skillet with leftover bacon grease, add garlic and chopped onions. Sauté over low heat until onions carmelize to a rich brown color.
Using a serrated knife, remove the rind from the brie and cut remaining inside into cube-sized pieces.
Add the brie and reserved pasta water to skillet and stir continuously until thick and creamy.
Stir in bacon and transfer to pasta bowls, garnishing with the chopped basil, salt and pepper.
